Fish Ratings Assigns Wildtype’s ‘Cultivated’ Salmon Saku Provisional ‘B+’ Rating After FDA Approval

Fish Ratings – San Francisco – June 4 2025: Fish Ratings has assigned the “cultured salmon cell material” produced by high-tech seafood producer Wildtype a provisional and highly speculative ‘B+’ rating with a Positive Outlook after the Food and Drug Administration issued a “no questions” letter about the safety of its production process.

Wildtype is an idealistic San Francisco start-up co-founded by a cardiologist and diplomat who met at a dinner party and decided to change the world by growing salmon cells for human consumption. Their production facility “looks just like a neighborhood microbrewery, except we grow salmon cells in our tanks instead of beer,” according to their website.

The very high cliché factor is reflected in the ‘B+’ rating, in accordance with Fish Ratings’ methodology.

The company combines its salmon matter with plant-based ingredients to make it look, taste and feel more like salmon. Its first product is sushi-grade saku. It will be available at Haitian restaurant Kann in Portland, Oregon.
